Eat to Beat Disease argues that the body maintains several internal defence systems, that these systems can be strengthened or weakened by diet, and that food should therefore be considered alongside other tools for supporting long-term health. William Li's framing is that the useful question is not which foods to avoid but which ones help the body's own maintenance machinery work well.
The framework names five systems: angiogenesis, the growth and regulation of blood vessels; regeneration, including stem cell activity; the gut microbiome; DNA protection and repair; and immunity. For each, Li describes the biology, then catalogues foods that have been studied for effects on it, from tomatoes, soy and green tea to certain cheeses, cold-water fish and stone fruit. He includes practical guidance on choosing and combining them.
It is for readers who want an organising structure for food choices, and who like understanding the biology behind a recommendation rather than following a list.
On the evidence, the five systems are real physiology, described accurately. The weaker link is the chain from a compound studied in a laboratory to a health outcome in a person. Much of the food-specific research cited is cell culture, animal work, or observational epidemiology, and effects demonstrated at concentrations used in a dish are not reliably reproduced by eating the food. Li is careful about language in places and less so in others, and the title itself promises more than food can deliver. Nothing here is harmful, and the overall dietary pattern it points toward, heavy on plants, fish, legumes, tea and fermented foods, is well supported as a pattern. The precision implied by targeting individual defence systems with individual foods is not yet earned by the evidence.
