Glucose Revolution argues that the size and speed of blood sugar rises after meals, rather than total calories or carbohydrate quantity alone, deserve more attention than they usually get, and that the same foods can be eaten with substantially flatter glucose curves by changing how they are combined, sequenced and timed.
The practical framework is a set of 10 adjustments. Eat vegetables or fibre before starch. Take a tablespoon of vinegar in water before a carbohydrate-heavy meal. Walk for 10 to 20 minutes after eating. Prefer a savoury breakfast to a sweet one. Clothe carbohydrates in fat, protein or fibre rather than eating them alone. Jessie Inchauspe, who trained in biochemistry, presents these alongside continuous glucose monitor traces and an account of spikes driving inflammation, energy crashes, cravings and long-term metabolic strain.
It is for readers with prediabetes, insulin resistance or persistent post-meal fatigue who want changes that do not require eliminating foods.
On the evidence, several of the specific tactics have genuine support. Meal sequencing and post-meal walking both reduce glucose excursions in controlled studies, and vinegar has a small supporting literature. Most of those trials are small and were conducted in people with type 2 diabetes or impaired glucose tolerance, where the clinical relevance is clearest. The book generalises much further than that. In metabolically healthy people, normal post-meal glucose variation has not been shown to drive the symptoms and long-term outcomes the book attributes to it, and continuous glucose monitor readings in that population are easy to over-interpret. The interventions are low-risk and the eating pattern is sensible. The causal story connecting everyday spikes to ageing, mood and disease is stronger in the book than in the literature.
