    The Plant Paradox argues that lectins, a large family of proteins found in many plants, are a hidden cause of modern chronic disease. Steven Gundry's thesis is that these proteins damage the intestinal lining, allow bacterial components into the bloodstream, and provoke inflammation that manifests as weight gain, autoimmune conditions, joint pain, fatigue and cognitive complaints.

    The resulting programme requires eliminating a long list of foods: all grains, all legumes and beans, peanuts and cashews, nightshade vegetables including tomatoes, potatoes, peppers and aubergine, most fruit, conventionally raised dairy, and squash and cucumber unless peeled and deseeded. Certain preparations are permitted, such as pressure-cooked beans, and the book recommends supplements sold by the author.

    It is worth knowing about chiefly because it has been widely read, and because patients often arrive with questions from it.

    On the evidence, the central claim is not supported and has been criticised extensively by nutrition researchers and dietitians. Some lectins are genuinely toxic when consumed raw, which is why dried kidney beans must be boiled properly, but ordinary cooking, soaking and canning destroy the great majority of them. At intakes from normally prepared food, there is no good evidence that dietary lectins cause intestinal damage or systemic disease in healthy people. The foods the book eliminates are among the most consistently associated with better long-term outcomes in observational research. Whole grains and legumes in particular are linked with lower cardiovascular risk and lower all-cause mortality across large cohorts. People who follow the programme sometimes feel better, which is unsurprising given that it also removes most ultra-processed food, but the improvement is unlikely to be attributable to lectin avoidance. The commercial supplement line attached to the thesis is a further reason for caution.
